Avocado Toast

One of my favorite places to go for a healthy breakfast is First Watch. They have some incredibly wonderful options that are healthy such as the triathlete and almost everyones favorite, Avocado Toast. At 700 calories, 59g Carbohydrates, 26g Protein, and 46g Fat, it works for some folks but not everyone’s macros. Here is an option at almost 300 calories less and tastes absolutely amazing!


Low carb Bread
2 whole eggs
½ avocado, sliced
Salt and pepper

Keto Info – 1pt Fibrous carb, 1.5pt protein, 3.5pts fat (keto-ish)


1: This is simple as it comes. Have two frying pans sprayed with pam and ready to go on high. In one pan, slice the bread in half length wise and lay in the pan to brown each side

2: In the other pan, crack the two eggs and place in pan to cook. For the bread, 3 – 5 min each side to brown is sufficient.

3: For the eggs, wait till the white is almost fully solidified and then flip

4: Cut the avocado in half, take the pit out, and remove the skin. Slice into long strips, 4 – 5 total

5: Take the bread out of the pan and lay it on your plate

6: While the eggs are finishing, place 2 – 3 slices of avocado on each piece of bread and “mush” it with a fork

7: Take the finished eggs out of the pan and place on each on the bread with avocado. Sprinkle with some Himalayan pink salt and some pepper
