Chicken Bacon Zucchini Boats

One of the main things I miss was a good fried potato skin. While I allow myself to have foods I enjoy on occasion, It’s a balance of want versus worth. So, instead of using a cheat meal on something that will taste good but make me feel awful, I problem solve. These zucchini boats are the solution! Its as simple as 5 ingredients too!

What You’ll Need

Zucchini (3 large zucchini)
Chicken (breast, cooked and shredded)
Bacon (2 slices total)
Shredded cheese(Mexican blend, 3 servings (1/4 cup each)
Sour cream (1 tbsp per boat)

Pressure cooker
Frying Pan
Pam Olive Oil Spray
Pink Himalayan Sea Salt to taste
Baking sheet

1: Slice and cube 1.5lbs of chicken breast. Take that and ½ cup of chicken stock and place in pressure cooker for 15 minutes. Preheat the oven to 350.
2: While the chicken is cooking, take the 3 zucchini and split them down the middle, making 6 halves total. With a small spoon, clean out the insides of the zucchini.
3: Once they are hollowed out, place them on a baking sheet and put in the oven for 10 min.
4: Now, spray the frying pan with Pam, then take the bacon and dice it into small pieces and add to the frying pan. Sautee the bacon until crispy. Remove from heat.
5: In a bowl, place the chicken and bacon (with fat) together and “blend” with a fork creating a mash of sorts. Add a pinch of sea salt.
6: Pull out the zucchini and let sit for a few minutes. Once moderately cooled, begin filling the zucchini with the bacon and chicken mixture. If you are measuring, 2 oz per “boat”
7: Take ½ serving of shredded cheese and sprinkle it over each zucchini, giving it a coat of cheese. ½ serving will be just enough to cover each.
8: Place back into the oven for 5 min on broil. This will melt the cheese.
9: Once the 5 min are up, remove and begin to plate. This is 2 zucchini boats per serving!
